Pork Humba

" This recipe is known in some part of  Visayas and Mindanao. It is similar to adobo, the difference is that adobo has a distinct taste because of the vinegar, there's no vinegar on this one".

Ingredients:

1     kilo          Pork Belly, cut in big cubes ( or any part you want )
1     can          Soda or Cola
2     cups        Water
1     can          Black Beans ( small can )
1     pack        Dried Banana Blossoms ( small pack)                
1     tbsp         Salt
                      Sugar ( optional because of the soda, you may need as a neutralizer it if it gets too salty
                                    for you )
1/2  cup          Soy Sauce ( just add more if you think it's not enough, it should look darker)
4     leaves      Bayleaf
1     whole      Onion , sliced   
1     head        Garlic, crushed

Directions:

Put all ingredients together in 1 big pan, miz and  simmer until pork is tender. Check the taste and correct it from time to time. Mix once in a while. Make sure there's at least 1 cup of sauce left  and you are satisfied with the taste before you remove from heat.
